I would recommend the Garmin Fenix 8 AMOLED, Garmin Epix 2, or if you’re okay with the higher price and can do without the built-in LED torch, the Garmin Marq 2 Aviator.

These watches have AMOLED displays, they are rugged and durable (the Marq included). You’ll get AOD (Always On Display) for up to 6 days on the Marq and the 47mm models of the Fenix 8/Epix 2, or up to 10 days on the 51mm model (and even 14 days if you turn off AOD).

They cover all the features you mentioned, except for noise level measurement (if you meant the watch measuring sound levels). Keep in mind that for weather updates, you’ll need to connect the watch to your phone with data since the Garmins don’t have LTE support. The Marq 2 Aviator also offers more advanced weather info and has a bunch of aviation-specific features. If you’re a student pilot, it’s perfect, but if you’re learning Pilates instead, these watches can also help with that, including the ability to create and download your own Pilates workouts.
